Understanding Roast Levels, Without the Jargon

Roasting is a controlled application of heat that transforms green, grassy-smelling beans into the aromatic ones we grind and brew. The darker the roast, the further that transformation goes.

Light roasts are pulled early, preserving more of the origin's natural acidity and aromatics — they tend to emphasize floral and citrus notes where a coffee has them.

Medium roasts balance origin character with the sweetness that develops from caramelization, which is why they're often an easy entry point into single origin coffee.

Dark roasts push further, where roast flavour — often chocolate, spice or smoke — can bring itself forward over origin character. Neither end is 'better'; they're simply different intentions.
